1. Prepare the ingredients
For this recipe, you need about
- 1/2 pound of fresh green beans
- 1/2 pound of fresh yellow wax beans
- 1 can of Romano beans
- 1 red onion
- 1 stalk of celery
- 4 tablespoons of raspberry vinegar
- 2 tablespoons of olive oil
- Salt, pepper
- Some fresh lemon thyme
For the fresh green beans, trim the stems. With a knife and cutting board, slice the onion and celery thinly, and chop some fresh lemon thyme. For your can of Romano beans, open it with a can opener and drain with a strainer. Give the Romano beans a nice rinse under a running tap water.
2. Blanch the fresh beans
In a saucepan of a salted boiling water, cook the fresh green beans for about 5 minutes. Take a taste test to check whether they’re already cooked, but make sure that they remain crunchy. When they’re cooked, use the skimmer spoon to transfer the beans to a bowl of hot water to stop the cooking process. Do the same blanching process for the yellow wax beans. 3. Make the salad dressing
In a small bowl, mix the raspberry vinegar with salt and pepper with a fork. While stirring constantly, slowly pour the extra virgin oil into the mix. Stir well until the salad dressing is thoroughly mixed.
4. Mix the ingredients
In a large bowl, add the blanched fresh beans, the chopped fresh lemon thyme, and the thin slices of onion and celery. Next, add the drained and rinsed Romano beans. Slowly pour the salad dressing into the mix.
To mix the ingredients well, close the lid of the container and give it a shake. If you find it too heavy, use two forks to mix them well.
5. Chill in the fridge and serve
After all the ingredients are thoroughly mixed, close the lid and chill in the refrigerator for at least 6 hours. This salad is best served when chilled.

1. Use fresh beans
Kitchn suggests using fresh beans rather than canned beans because they have a better flavor and texture. To give you a good head start, cook the fresh beans in big batches in the slow cooker and freeze with a splash of vinegar, to prevent them from turning gooey. Whenever you want some beans, just thaw them in the microwave.
2. Mix the salad dressing in a jar with a lid
The Institute of Agriculture and Natural Resources recommends mixing the salad dressing ingredients well in an airtight small jar. Just give it a shake and pour the salad dressing into the beans.
